Favorite Fast Freezer Meals?

Right now I'm in the (slow) process of stocking my freezer up with ready-to-go meals. I'm hoping to get about 2 weeks worth of meals in there, give or take, so that I can take a break from the kitchen. I'm feeling a little burned out lately. I enjoy cooking, but I'd like to devote some time to other interests and that time just isn't there when I don't get home till almost 6 and have to do any and all non-work things in the sparse amount of time before bed. I won't rely solely on freezer food, there will be a few easy things I'm sure. Like pizzas and grilled cheese, ha.

Anyway, the point of my rambling is- if you've got a recipe you love to whip from freezer to oven to dinner table, then do tell! Any suggestions welcome. Got a recipe that makes a serving for dinner and one for the freezer? Gimme. Have something that you look forward to pulling from your ice box everytime? Whisper it in my ear. Or in the comments, that might work better. Share! Please!

Jessica, visit cookingwithhilary.blogspot.com. There are a whole bunch of freezer meals. We've tried the enchiladas and chicken pockets and have been very pleased.

This lasagna recipe is super easy (It's on the Skinner Lasagna noodles box) and freezes really well. I work with 8x8 pans and make two suppers from one recipe. I also freeze it right after assembly and then cook it on the night I'm eating it. Yum!

Also, I found that quesadillas freeze well and are easy to reheat. I put the filling on the tortilla, fold the tortilla over and wrap tightly in foil. When I'm ready to eat one, I unwrap it and put it on a paper towel in the microwave for a few seconds to thaw the tortilla a little and get off any ice crystals. Then I put it back on the foil and fold up the foil around the edges of the tortilla so it doesn't burn. Pop in the oven at 350 until warm all the way through (about 15 minutes).

it's not really a freezer meal, & i don't even know if you do crock pot meals. but the easiest, and one of my favorite meals, is chicken salsa tacos. all it requires, is frozen chicken breasts & jar of salsa. put the chicken in the crockpot, pour the salsa on top, and on low all day, and use your fork to shred. yum!

Hi Jessica

I primarily fill my freezer with prepared vegetables: griled peppers, blanched Šµggplant and zucchini, etc. They are almost ready to eat.
