I work with 8x8 pans and make two suppers from one recipe. I also freeze it right after assembly and then cook it on the night I'm eating it. Yum!<BR/><BR/>Also, I found that quesadillas freeze well and are easy to reheat. I put the filling on the tortilla, fold the tortilla over and wrap tightly in foil. When I'm ready to eat one, I unwrap it and put it on a paper towel in the microwave for a few seconds to thaw the tortilla a little and get off any ice crystals. Then I put it back on the foil and fold up the foil around the edges of the tortilla so it doesn't burn.
